Easy  Rainbow Roasted Carrots


These Rainbow Roasted Carrots are rubbed with spices and cooked just until tender. The carrots are sweet and savory with just a hint of spice from the creamy yogurt sauce!

Ingredients for Rainbow Roasted Carrots 

– 1/2 C Plain Yogurt – 1 tbsp Harissa – 1 tbsp Parsley – 1/4 tsp Thyme – 2 lb Rainbow Carrots – 3 tbsp Butter  – 2 tbsp Paprika – 1/2 tsp Mustard Powder – 1/2 tsp Fennel Seed

How to make Rainbow Roasted Carrots!

 Preheat the oven to 350. Mix yogurt, harissa, sparsely, thyme, cilantro and lemon zest. Season with salt and pepper, set aside. – 

Melt butter in  pan. Add spice and herb ingredients.. Add carrots and mix until coated with sauce. Place in oven for 35 minutes. Turn on broiler and remove lid for 5 minutes to brown carrots.

Plate the carrots with plenty of yogurt sauce.
