Broccoli Fritatta 

These frittatas are versatile, vegetarian, and quick and easy to make – taking more or less than 6 minutes to cook!  This recipe with the vegetable filling only takes about 25 minutes to make.

 1 Head of Broccoli sliced into florets

1-2 Stalks of Celery sliced on the bias (about ¼ inch thick).
