- 1 English Cucumber
- 1 clove Garlic
- 1/4 C Lemon Juice 1 & 1/2 lemons juiced
- 2 Scallions chopped
- 1/4 C Water
- 1/4 C Nama Shoyu Soy Sauce
If you don't have English Cucumbers use Regular Cucumbers and peel the skin and scoop out the seeds.
You can swap out scallions for white onion.
Any type of Soy Sauce is fine if you are not gluten free
Lime juice is good instead of lemon juice
Soup lasts for 3 days in the fridge
For a bright green color add lemon juice right before serving.
