Beat the eggs and add the cayenne pepper and Sriracha
Heat olive oil in a medium sized nonstick pan over medium low heat. Add the bell peppers, jalapeno and shallots. Season with salt and saute for 5 minutes or until the shallots are translucent. Transfer the veggies to a plate.
Pour the egg mixture into the skillet. Once the egg starts to harden add the veggies on top of the egg on one side. Cook the eg for a few minutes and then add the cheese. fold over the empty half of the egg.
Once the inside of the omelet is no longer runny and the cheese has melted, slide it onto a plate and enjoy!
