Assemble the Strawberry and Goats Cheese Salad

  • Slice the cucumbers in half and scoop out the seeds. Then cut the cucumber into quarters. Thinly slice the cucumbers.
  • Clean and remove the greens from the strawberry stems, slice them thinly.
  • Crumble the soft goat cheese and shave the Manchengo goat cheese.
  • Shred the dill.

  • Remove the seeds from the cucumbers. The watery seeds will make your salad wet and the dressing wont stick to the lettuce.
  • Make sure your lettuce is dry before you dress the salad. Since oil and water don’t mix the wet lettuce will make the dressing slide off the lettuce. The best way to make sure your lettuce is dry is to use pre-washed spinach.

  • Add toasted walnuts or sliced almonds.
  • If you don’t like goat cheese you can use mozzarella or Parmesan cheese.
